Most cars are made in LHD countries, all the stock setup is setup for LHD so its cheaper to use that.

This is a good question
The main reason is, foolishly, most of the world are left hand drive. A lot of race series actually restrict cars to being LHD for homologenation purposes, to make it cheaper and to stop people gainign an advantage by moving the driver to the center.
Interestingly, a lot of older Ferraris are actually Right hand drive. The 250LM I believe was RHD as there is an advantage to sitting on the right at Le Mans (makes getting your lines right easier)

Most tracks are clockwise too.
And its down to personal preference and setup.
