Now and again I hear a 'running water'/'wooshing'-like sound from the engine bay. It seems too happen when I pull away and turn.......but not all the time.
Is it something silly like water flowing out the catch at the back of the bay below the windscreen?
I hope so.
Cheers.

Try bleeding the cooling system - sound like an airlock in the heater matrix.

Is your car lowered? I had this noise when I turn because the PAS hose had worn through on the suspension arm and was leaking slightly. Worth a look.

if it sounds like its coming from behind the dash then its air in the heater matrix system, just bleed it at the 3 points and it will be sorted

Try using a header tank when you bleed it. The prob is the rad expansion tank is lower than the bleed vavle at the back so air gets stuck.
Get a plastic coke bottle and shove that in the rad expansion tank then loosen all valves and fill up the mixture closing the valves as water comes out of them. Thats what i've done 3 times the last week and it has stopped it everytime. Hope this helps

The car IS lowered but it's a MK1 so has no PAS pipe issues (iirc)
I'll bleed and top up the coolant system today then.
Cheers.

Mine used to do this a few weeks ago when the engine was cold
So I bled the system, topped it up with water and antifreeze, changed the radiator and have not heard this wooshing water noise since!
