i had a similar problem so i changed my engine temp sensor and it fix the problem for me........but it could also be your idle control valve, on my vts the idle control valve is located next to the the the air box (has the 16v on it), i think its conected to the throttle body. its easy enough to take of just 2 torx srew i think.
ive got this link form another post of an idle contril valve

Could be your idle air controll valve mate yes they are something that do go wrong. Also it could be loads of other things.
Its one of them problems its a bugger to find without a diagnostic tool.
I had the same thing with my mates Vectra last year changed the valve still didint solve the problem. So we had it put on a diagnostic machine it ended up being the Crank position sensor faulty.
Might be worth doing that first it only costs about £25 and will tell you wats up. Coulod save you money in the long run.

getting a diagnosis could find the problem but i took mine to have two diagnisis and didnt find the problem. is your engine light on? if so i would take it in.... but the engine temp sensor only cost me about £12 from citroen and it fixed the problem for me
