right hand side is it the oil level or oil pressure or something it has just been serviced and ready low not sure oil is at decent amount on the dip stick aswell ????? baffeled the car is not being driving atm either so it not leaking and i wont seize it but just unsure what the dial is ?

no on the vts on the right hand side of the rev counter there is an oil gauage not sure what it represnets (level, temp)

It checks oil level when you first switch on the engine and then during normal driving it indicates oil temp.

It's oil temperature gauge mate. The other is coolant temperature. Saxo's don't have an oil pressure gauge.
PS. Just read that the car in question is a mk2. In that case, it just indicats temperature. Doesn't check the level.
