hoe easy is it to adjust the clutch on a mk2 vts (i dont know much about that kid off stuff).
The problem is the bite point is too high (ie the pedal has to be nearly fully out else it overrevs)

if you have a aftermarket air filter this is easy
look down the side of the battery (above the gearbox)
you will see the clutch arm connected to the cable with two small nuts on the end.
Losen the first to allow you to losen the second one. Then either tighten or losen the the second one to how you want it (this will need a SMALL test drive0then tighten the first nut what you losend onto the second nut so it doesnt come lose.....sorted

as above but if u clutch pedal is already quite high chances are your gonna need a new clutch!!!
you'll be looking at about £70 ish for the clutch
and the repair times manual gives you about 6 hours to do it!! so it depends on what the hourly rate is where you go!?
but im a mechanic so i got my clutch trade £45
and i fitted it myself! only took me 2 and half hours!!!
