fan switch
engine temp sensor
falt in the connections or such
mine does this all the time! its my temp switch, but i cant be arsed to spend 4 quid on a new one! so i just plut it into a computer and turn it off every few months!

I believe the fan is controlled by the ecu on MK2 models. Mk1 used a conventional fan switch screwed into the radiator however.
I don’t know how to fix it, maybe disconnect battery overnight?
