First choice is a Bmw 318i M Sport Coupe/Convertible, but im open to other ideas :)

Leon Cupra R + Stage 2 = Looks mint, ~280BHP.
BMW I presume you're looking at e46? 318 would be freaking slow tbh, or are you not bothered about speed? Tried quotes on a 330ci any chance? Might be suprised, my mate who's got a 330ci Clubsport is 19.. Paid 9k for the car iirc, it's a proper tidy car, and pretty quick.

Mazda rx8 (230bhp standard, RWD 'fun', Look mint, not bad on fuel, easily tuned to 300bhp+)

PS good luck with insurance on all these. You'll need £7000 of that cash on insurance so i recommend a 1.6 VTR saxo if they'll insure you ;)
19s a bit young dude, go and get a bit more experience before you start being daft.

I swear these are meant to be pretty sh*t on fuel?
brb topping up oil every journey
brb rebuilding engine at 50k
brb having to rev the engine to 7k before switching off or it'll flood

Noooooope!!!!!
You've heard absolute BS mate, I average 20 mpg (not to bad for a sports car), engines do need care I.e check the oil every other fill up (not really that much as you should do that in any performance car) and usually its about 1L of oil every 3000 miles (hardly bank breaking) and the rebuilds are only really for rx7s, plenty of rx8 engines have gone over the 100k mark fine.
And the rev to 7k is not nesicery, because of emissions the rx8 runs very rich on a cold engine, so if you switch off too early the engine can flood, two ways of dealing with this are a) wait till the needle rises a few notches (literally takes 1-2 mins even just idling) or as you say rev to 4k for 10 secs then switch off. The only time this becomes an issue is say you want to move the car to wash it, simply take a spin round the block first or leave it running whilst your in it for a min

+1...
Such ridiculous high maintenance. Two of my friends owned them and got rid of them. One of them paid for the rebuild whereas the other just got rid of it as soon as it started to go wrong tbh. Way too much money. More hassle than they are worth imo.

20MPG given the engine size/performance is appauling imo. + they're stopping production of rotary engine cars which is a bad sign, no doubt parts will go up in price etc. Not really a car that's going to be much fun to maintain in the future.
Even if you owned a Gallardo for example, you wouldn't need to check the oil every other fill up (I presume you mean Petrol?) That's mad!

True, with the right attitude and financial planning anything is possible. Although it's a massive plus if you live at home, usually no rent!
I joint own a home, and have almost £25,000 saved in a separate savings account. That will be going towards a house of my own though, cannot touch that, only add to it.

Ever thought about getting your own place to live?, 8k as a deposit is a pretty good start, and a much more sound investment, i was 21 when i bought my house i could have spent the 4k i had saved on a car but sometimes you have to look at the bigger picture, sure its nice having all that spare cash that you obviously work hard for, but on the other hand its nice to have your own place/space.

i wouldnt call that high mileage really, most of the more 'luxury' cars have higher mileage than that as they were usually motorway cars :p

I do like those newer 3 series coupes as you linked. (the ones just prior to the newer shape). And that one has LED rear light clusters so IMO looks beasty.
