Does anyone know the diameter of VTS discs?

And if given the choice, boggo standard 283mm's or grooved VTS discs, which will perform better?

283mm discs have more material so will have a greater heat capacity so will in effect perform better.
If you are talking braking distances then it will be virtually the same, the only change of moving a caliper out is the effort required at the pedal end.

What are you wanting to achieve?

better pads and fluid, bled well?

as said, a bigger surface will be able to get hotter, so you can brake for longer. you can brake harder with the bigger ones but you still run the risk of locking up. i've only locked my brakes once (standard vtr!) and that was in the wet. every other time they've been fine
