Temperature gauge ....

Just recently my engine temp gauge has found a mind of it's own ... It decides to move up into the red an back down to cold all day long ... At first I thought it was the thermostat but if it was I don't think it would move at all, so thinking it could be the temperature sensor but not sure? Any help please?

my did it month ago and it was headgascet.
check if ther is oil in water or water in oil or any presure in cooling system.

it can be just sensor

Replace the temperature guage sensor 1st see how it goes(always replace the cheapest parts 1st then work through)
