head skimming at a place near me was £25. As said gaskets are about £50 incl. new bolts. Do you have a torque wrench that does 20nm and a degree wheel/gauge?

did mine for less than £80 but got all the parts on trade.
didn't bother skimming the head for two reasons
1 the h/g wasn't gone just changed it as a precaution.
2, the head was totally flat.

you will need to get the head skimmed

You don't /need/ to get the head skimmed, that's only if it has over-heated.

Check the head with a engineers ruler, if it's not completely flat to the point that the gasket won't seal it THEN have it skimmed.

As for parts, do the cambelt, water pump, thermostat, oil, oil filter, inlet and exhaust gaskets, it sounds like a lot, but if you don't know when any of it been changed its worth doing it now as it's so much easier, plus, you'll be draining the coolant, no need to drail the oil, but it's only a 5 min job, might as well right?
