apparently the seats are banned along with door bars which go above the steering wheel. To be honest I dont know how well this is enforced.

I'm a regular on www.northloop.co.uk, which has a number of 'Ring regulars and locals on it. Bridge to Gantry is also another good source of info.
So, the rules exist, but are only sporadically enforced. Winged seats and cross bars on a cage are on the 'no' list, but you might get lucky. Or you might get turned away. They are pretty hot on anything that restricts your exit, or could injure you inside the car, so no exposed door innards in stripped cars, etc.
A recent occurrence is also wanting to see all paperwork (so take it all) and they have arbitrarily banned people for odd stuff like plastic windows 'because it would fail a UK MoT'. WTF?
In anything non-standard, they seem to have the ability to make arbitrary judgements with no comeback. What an arse.
For every 'we did X and we were fine' there will be a story of someone getting turned away.
So I'm probably not much help really, beyond expressing that it is variable.
Personally, I'd do TF in a hired car - such as the Rent4Ring Swifts - or book onto a track day such as a Destination Nurburgring event (although for clairity, I'm mates with Darren who runs the DN events).
Not been on a TF in my own car for years due to insurance worries. Shame.

I think its more aimed at the german cars ie german plates not german manufacturers. Uk car are generally ok as long as your paperwork is all hunky dorey
