the bracket, is what mounts the caliper (brembo) to the strut on the car.
Different cars have different hub arrangements, thats why need different brackets so you can mount the caliper to your strut.
But with refference to what you said, you can change the size of the braket to run bigger discs, pointless going too big as the part of the disc closest to the hub wont have any contact with the the pads in the caliper.
