Because of aero dynamics. Force required to punch dat saxo through the air is exponential. (I think it's a cube function actually).
So,
average acceleration will be similar - up to a certain speed. but because the gears are taller, the overall top speed will be less because the torque at the output of the gearbox is less at a given rpm.
You need torque to sustain a high speed, as a horsepower is 33,000 torques per minute
