No, do not bypass the heater matrix and definitely do not block it off.
If anything, fit a micro matrix and a small fan with a piece of duct and a slot pointing at the windscreen. you'll need some kind of heat to demist.
Rainx anti fog won't work, before someone comes along and suggests that.
