going to buy either a 4-2-1 or a 4-1 piper de-cat which will attach to my magnex cat-back system

what are the difference between the two?

which will show best improvement?

Im guessing your putting this on a road car? If so then you wont notice any difference between the two really. However, the 4-2-1 gives low to mid range gains and the 4-1 gives mid to high in reality.
