got some metal brackets holding it on.
can see a bracket on the left of the oil cooler

Where do the pipes go?
Also what happens to the normal oil cooler behind the filter and the 2 hoses the come off the top rad hose

You ditch the standard heat exchanger(oil cooler) along with the standard top rad hose and replace with one without the take off's(106gti).
Pipes are routed around the side of lower cross member and back into the engine bay beneath the lower chassis rail and then to the sandwich plate.

you dont need to get rid of the heat exchange. you just put the sandwich plate onto the heat exchange , then the oil filter goes onto sandwich plate.

When will you need an oil cooler? Like tracks days or summit? Or is it just for highly modified cars? Or is it just helpfull to stop it overheating?

iirc you need a thermostatic sandwich plate. The sandwich plate stops the cooler overcooling while normal driving. You only want the cooler to reduce temperature when giving it some on the track (as temp rises too much).
