Yes. You will have a "rebuilt" vehicle. See this link

Basically you fill in the form stating what bits you've changed. If it's a new shell they (VOSA) might want to inspect it.
You will need to provide proof the shell is new by producing a receipt etc.
Once the car has been accepted, you'll get a VIN number which you can then have stamped onto the shell. You'll also get to keep the original number plate.
If you stamp it yourself before it's inspected or before you get approval, they'll just say you've rung it and they'll not let you use it on the road. They'll electronically scrap it so you can't tax it etc.
