Default *engine Temperature Coolant Sensor*

Hiya can any1 tell me where this is please? Its a 2000(V) VTR one of the first mkII engines. Is it on the thermostat or the head gasket? The car doesn't start well if its been sitting for a while and it sits and revs at traffic lights and will cut out occasionally - what do you think this is!?
