Default Help with some issues

Now i know this aint a saxo but I'm new to engines and that so bare with me (:, so this morning i've taken a look at the engine at what needs replacing. it needs a new coipack and new sparks. But my querie is this when your revving the engine (Not in the tesco car park lol) we have noticed if we put foot to the floor immediatly it bogs down to 1000 but if you put it down smoothly it goes up fine, is this normal?

(New to driving and engines)

What do they normally do when they service it, because you can buy corsa b service packs off ebay for £30, also forgot to mention.
It's a 4 cylinder engine, 3 spark plugs are bosch and 1 is NGK now the NGK one was very sooty, could this be a sign that the cylinder is buggered due to someone changing just one plug in the past?

When i my coilpack and spark plugs needed changing,if you put your foot down it would take ages to rev up also when pulling off you'd have to give it alot more revs otherwise it would stall
