Default 1.4 8V Running hot

I have a KFW 1.4 8v with the rad cap on the plastic reservuair.

So, a month ago, a cold morning, started driving and suddenly I see the temperature needle raising above the middle, for the first time since I bought the car, 2 years ago.
After a while it dropped below the middle and stayed there.
I got home after some 40 kilometers of driving, parked and saw coolant on the ground. It was from the cap. The cap was loose, I tighten it and drive again.
Started driving again and the cap flys off and I lose it somewhere in the road losing almost 2.5liters of coolant.

I change the cap, perfectlly seals and tightens(unlike the before), added coolant, bled the system and still the same, temp raises to approx. 3/4 and sometimes the red light comes on.
It depends on driving for example if I am going on a hill and there's load on the car the temp raises, but on a downhill road without me pressing the gas pedal it stays in the middle.

I have to note that rad is full of coolant and I bled the system from all the 3 bleeding screws several times.
Thermostat seems to work fine as the upper hose is hot which means the coolant is circulating.
Radiator fans start turning when the temp needle reaches just before 3/4 (which I believe is the normal thing to happen) and close when temp goes to middle.

What am I missing here?
May be water pump?
Clogged rad?

I don't know ...
It is like "after the cap incident" something went wrong.

Hello , I had this issue , turned out that I had the wrong water pump installed ! , now I do not know if this is true but the pump has different amount of splines over the TU range , after the mechanic changed what he said was the coorect one the issue went away , before this I had the temp sensors changed , had the coolant system checked , installed a vts rad and twin fans , turns out the pump sorted it all

[ UPDATE 1 ]
Yesterday, the red light was coming on really soon and the temp gauge raised above the middle activating the fan constantly. This happened after 10 mins of driving which obviously isn't normal.

After some 30 mins of city driving, I stopped to take a coffee and noticed coolant leaking , AGAIN... And it is coming again from the cap. At this point I don't have a clue what could be wrong. Please someone help, budget is really low and rn I can't afford a mechanic ripping me off... ��

Timing belt and water pump are due for a change, I've already ordered the parts from Autodoc and waiting to be delivered. I hope this will fix it. But the coolant leaking ? I don't know anymore...

have you checked the bottom of the rad were the lower hose fits on my corroded there and had a blown out on the m25 lost all the coolant in seconds and blew the head gasket

Try a new radiator cap too is the coolant too still good and the oil filler cap no gunky mayo in it ? .
