But the questions I first would like to know is...
Contracts ... Are they that important ?
I see players that are gold plus black whats that about ?
Looking for some really good defenders so far as you can from above I need a RB with some pace and two really good central defenders.

Contracts are quite important, every time you play a game your player loses 1 game off their contract when they run out they need to be renewed!
Gold players are just normal players along with bronze and Silver. The black players are IN FORM players EA release a team each week of players that have played well for their clubs.

The chemistry irritates me, sometimes its so hard to find a player that fits and you cant tell until bought

Course you can! Factors that positively affect chemistry are a player sharing a same team, league or nationality as the squad. Having a player from the correct formation is key as well.
Also, using a manager with the same formation as your squad will bump your chemistry up too.
Anyone want to buy a 4-1-2-1-2 Davie Moyes? :-)

ive never ever won a player of the week or a good player from packs ( always buy the best pack available too)
I think chemistry should build up if you keep using the same team too, that would be good. or paying for training that enhances chemistry(not just for the one game)

I've had some good players in packs in the past (recently has been shit)
Cassillas - Sold for 125K
Aguero - Sold for 125K
Hazard - Sold for 150K
This was when I had an Italian team and I now have an English one so I'm gutted I sold the latter 2.
Also have Ballotelli that I won but I use him.

Just started playing this today. Despite all my defenders being 60 overall, still managing wins! 
Diego Milito upfront with Jay Rodriguez and Borini.
Malouda, Lallana and Morrison in Midfield.
Does "chemistry" actually effect how the team performs?
Only 4 of my players are actually in their preffered positions haha, but it's the best I can do for now though.

Round about 60 in chemistry
Would buy packs but went to Walmart to buy some MS points then to get back to the apartment to find out that the codes doesn't work because my live account is UK and the points are from Canada.
