I think panning is when everything is blurred except the car

a pan is a side on shot where you pan with the car (follow it in the viewfinder)
on a slower shitter speed to show the cars movement

what camera are you using?
if its got multiple point selection you want center focus point.
id also go for a slightly faster shutter atm as the pics look fast but are not sharp, slow the speed down as your technique improves

400D you have multi point focus.
you select the center Focus point.
iso at 100 if sunny, if in shadows etc be prepaired to up the iso.
panning 1/125 usually for crisp shots, ive done a 1/40 at my best, but then other cars ive had to go 1/250 etc... so its just about finding whats best for the track/cars/weather etc..
does that make sense?

Also, when you look through the viewfinder you will see a number on the bottom of the screen you look through. This is your aperture setting. If you see this number flashing then you need to increase your ISO until it stops flashing or slow down your shutter speed to let more light in(can be difficult if shooting motorsport)
What lens are you using, this can also affect your ISO settings
Practice makes perfect, although nothing is ever perfect

faster cars you can go for a higher shutter speed... whereas a saxo looks practically like its not moving anyway...
p.s. i ignored the 1/40 exposure comment for my statement.
