Only if you can calibrate the gauge to the same inputs as the oem one

With a buget of say £500 should I still go for stack gauges or a dash ?

Hard to say. If you're not going to use the full capabilities of a full digital dash then there's not much point unless you really like them. An analogue setup as above is perfectly fine, and looks good. You can also get all the parts cheap if you shop around or go second hand.
