Standard ECU?
Sandy does race looms for the DTA, not sure if he does for others but worth giving him a try.

It depends how extreme you want to go..

If its just a thin out of the std loom and re-wrap then a few hours with a wiring diagram should be enough..

Mines currently away having it all remade as the stalks have all been ditched and im running a digital dash and im useless with electrics!!

I'm confused what are you asking?

Can you cut unnecessary wires? YES

Can you rip everything out and have a custom loom made? YES

Is it worth it thought?
I would guess it's not , if you only want to take out light and indicator wires.

Personally i'm going to move all fuses in car , move battery to rear and tidy up the engine loom by removing the crash sensor barrel ( dont know how its properly called ) and placing main cut out switches

It depends on how far you want to go matey. I spec looms up to match people's needs. I'm currently doing one on marks and have multicore on the internal looms.
This makes everything neat and tidy.
Plus I use new pins on the origional plug so everything looks "made for"
