As you haven't mentioned your TV, I assume you are refering to the settings within the PS3 itself?
There's not really that much you can alter... Are you using an amp for your sound output? How are you sending the audio to the amp? If it's NOT via HDMI, you need to set you PS3 audio output settings to BITRATE and NOT LINEAR PCM. It very complicated why, but with LINEAR PCM, you will not be able to get surround sound.
For visual settings, make sure RGB Full Range is set to LIMITED, and NOT FULL. Again, another long story... Simply, if you set it to FULL, you will suffer from an issue known as "Black Crush." I would also turn SuperWhite and Colour Filter OFF too.
