No one would have batted an eye about you using the car on track - I honestly don't give a fuck whether you are "allowed" to or not.
It's the fact that you're being all mysterious about 'borrowing' an identical Polo to use on track and you're scared to death that VW are reading this and they'll come and take it away from you during the night. It's laughable.

The car is paid for so they can't take it. Besides whether I'm used the car or not I'd still never admit to it on a public forum. You genuinely do no know who is watching!

'They' won't take your car off you for using it on a track. But your warranty may be void if, like your turbo, something was to blow up because you were using the car outside of what it’s designed for.

But the turbo broke on the road at 70mph?
Regardless a turbo should be more than capable of lasting 100-150k not 5k!

People hammer their cars on a and b roads every single night with no problems with their warranty or their cars for that matter.
Track use should use consumables (which aren't covered by a warranty) unless you mishift or over rev or something in which case I would expect engine damage.
