If it was headgasket mate cant imagine a thermostat sorting it out temp!
I'd get a second opinion, is there any white creamy stuff in the head of engine?

when my headgasket went the engine still ran but the temp was thought the roof on red light, it cost me £600 to fix as the head needed skimming cuz it could of been warped.

It will run for a certain amount of time, but the more water gets in to your engine the higher risk of seizing it up!
As said, I would get a second opinion!

if its loosing oil it could be one of the following:
headgasket
piston rings
valve seals
or a seal gone e.g crank seal, sump seal etc.. but i presume its been inspected for general leaks so its probably more likely to be headgasket, u could get a second opinion but £500 is a average price for a headgasket job, you should do it yourself mate its not particually hard and will save a fortune
£100 headgasket set
£40 cambelt (just as well replace it while its off)
£30 head skimmed (if it needs doing)

am currently swappin ma headgasket in ma 1.4 westy, a need to take off one of the engine mounts n prop up the engine with axel stands n a torque rench will be useful for putting everything back together!

If there is oil / water getting into the combustion chamber and coming out the exhaust then any gasket failier can be diagnosed 100% by a compression check.
I'm suprised if this wasn't done.
Personally it sound like the mechanic is being too vague which I don't like.. Firstly Don't run the car as if there is a problem you will only do more damage.
Head to halfords and get a compression tester for about 15 quid. Follow the instructions and marvel at how you've just saved yourself about £70 in mechanics bills. Post up the results here or PM them to myself and I'll diagnose them for you.
The basic theory is that the readings should be virtually the same across all the cylinders. If there is one or more down you put a teaspoon of oil in there and retest to see if its the piston rings..

A torque wrench is one of the essential tools you need for any work to the car.
