if i use cams do i need a special headgasket? if so what thickness etc?

No, the standard headgasket is fine - whatever thickness is right, it been skimmed? Standard should be fine but watch the valve clearances.

it doesnt need to be skimmed cos its a brand new rebuilt head so im just going to swap them over, do i need an uprated gasket? i was told if i didnt get a race spec gasket it would just blow every 1000 miles!?!

That's rubbish, a normal one will be fine.

Normal is fine.
If it's freshly rebuilt then it'll have probably been skimmed to make it flat, so watch clearances if your fitting a wildish cam
