only difference is in the loom and how many plugs go to/from the ecu
From what i know you cant get an 'adaptor' and converting from one to the other is a lot of hassle casue the loom has to be replaced along with the engine and everything else. its much easier if you can get a donor engine the same as you've got

i converted a single plug engine to 3 plug.
needs a new loom and ecu, and to make that fit you need a new alternator, new injector loom, cts, tps, oil pressure sensor, second lambda. i think thats it. oh and if its early single plug you'll need a later coilpack.
if youre using the gearbox from the single plug car you'll also need to change the speedo sensor.
easier to just get the right engine in the first place

also, if you were to rewire the single plug loom into a 3 plug car you'd have to change the wiring for the radiator fan, single plug cars have a sensor in the top o fthe radiator which switches the fan on and off, 3 plugs control the fan via the ecu

would my 3 plug vtr fan work? or does it have to be vts?
