Could be a few things
Is it using water?
Ask him if he skimmed the head when it was off.
£500 for an 8v head gasket job is day light robbery, I'd of done two for that price and still had some spare!!!

If the head HAS been skimmed, and he changed the water pump which he should have
Either the block is cracked or the rad/cooling system is blocked I'd have thought, less he's used a cheapo gasket kit.... Or the thermostat is totally screwed
Bit of a shit mechanic if he can't tell you what's wrong lol

If he really doesnt know what hes doing , with it being a saxo it probably has an airlock thats harder than usual to shift. Seen this many times, and isd it actually overheating i.e the fan staying in on full speed or is the temp gauge just sitting high? and as for the "is it just the gunk clogging it"......i really hope he flushed your cooling system if the oil and water mixed ;)
