Yeah ive checked the fuses. Would attaching a multimeter and looking for some kind of resistance values or a producing a voltage when I turn the fan by hand also show if its working or not?

just run a wire from the positive on the battery to the fan to see if the fan unit itself is working then yiu can rule that out

right so I just run a copper wire from the positive on the battery to one of the pins on the temp sensor and if the fan kicks in it means the sensor is working?

No, run two wires, from positive to fans positive, then the other to earth, to rule out a knackered fan
