Since my car is gonna be mainly track use, I'm going to get a bright red LED light to fit on my dashboad/A-pillar so that if the oil pressure drops for any reason, I'm far more likely to notice a blinding bright red LED as opposed to the tiny little LED next to the coolant temp gauge..

Just wondering if it'll be easiest to scotchlok onto the wiring for the existing oil pressure light built into the dash?

Don't use scotch locks on any thing they are possibly the worst thing you can use.

Lol... I also have a large oil pressure light!

The oil presure switch only actually gives an earth... So you would still need to feed one side of the light with 12v, then yes you could join into the wire from the plug on the dash to get the earth feed :)
