Looking at another Volvo with a Renault lump in. It's on gsxr carbs just wondering how it works, like from cold starts etc

Depends if it's well set up ect. Just like everything else if it was built to a high standard and set up well using good quality parts it will work fine.

What I mean is on carbs normally you have a choke, just don't understand how that works on bike carbs

Depends how you are going to use your car mate, If its a day to day car you can fit a choke cable but tbh bike carbs are never going to be best on a day to day car.
The ones i have seen and worked on just give the gas pedal 2 presses on start up then keep the revs at 1000rpm until the engine is warm ish.

bike carbs do not usually have an accelerator pump --so pumping throttle will do diddly unless it has a pump
webber carbs have a pump circuit ,so it works on them
