Bought a VTR last week, 1999 Mk1 in Venetian Red. Never had an 8v so a few questions regarding exhaust
Had a look underneath. Seem to have the following
Manifold with lambda > cat > centre section > rear box
Is that correct?
If so, what 4-1 manifold is best to use to still have the lambda in it. Plus can I decat from mani back? Have seen some with a cat in the mani but not sure what version it was on

yes thats correct, recently did this to my mk2 vtr so I could have a 4-2-1 mani with a cat underneath.
You can get de-cat pipes to go were the cat should go and swap them over for MOT's. I've kept mine in just for ease.
As for what manifold brand I'm not sure whats best. I've got a new Toyosport one which seems to do the job although fitting was awkward.
Believe super sprint and piper are the best but they cost a lot more new. May be able to find a cheap second hand one though.

So I reckon on a 4-1 mani, decat and then a SaxSport (or alike)
