Whats your budget?
Are you after a SLR or compact camera?

Budget is the amount of money you wish to spend on the camera...
SLR is a camera where you can change the lens, compact has it built in (e.g Canon EOS vs Canon Ixus)

it depends what type of camera you want.
got the compact as shown above, the DSLR as shown above as well, but also the bridge cameras which sits in the middle of the compact and DSLR
i havnt got a clue on compacts or bridge cameras though.
DSLR wise, as im sure the others will say, you're best off looking for something along the lines of a 20D on the canon side. Dont know about the nikon alternative though

doesnt matter what equipment you get, you won't get 'pro' looking pics if you don't know how to use it.
what are you taking pics of?
edit: budget too?

any photo can be edited.
what do you class as a 'professional' photo?
as jay said, you can have a camera capable of taking amazing pictures, but if you dont know how to use the equipment, then you will never get an amazing photo

agreed its not all about having the latest/best/ most expensive camera its knowing how to use it and getting the best out of what you have. Im still using a 10d after 5 years but i still managed to qualify as a professional with the British Institute of Professional Photography ( http://www.bipp.com/) and achieve the higher associateship level at that.
