Canon & Nikon are easiest to get lenses for and should be able to find something in your budget from either. Best advice I can give is to go to somewhere like Jessops and try a few out and see which you find easiest to use

For around £400 brand new you are looking at a very basic entry level Dslr from either canon / nikon / sony etc...
This will be perfect if your wife is new to DSLR photography as they will be easy to use etc... and still produce good photos.
or you can do down the second hand route, you will be able to pick up some good bargains on ebay etc...
All depends on what you want to buy

Sony are good for beginners as they have image stabilisation built into the camera body so sharp images are easy to get, and lenses are usually cheaper (they bought out Konica Minolta so 2nd hand lenses will still fit). And they have fairly simple, almost compact like, user interfaces. However the image quality isn't quite as good as Nikon.

I've just paid £470 for the Canon 1100D with two lenses from Curry's
I got it for the wife for her birthday earlier in the month and she loved it, when I gave her it she was in floods of tears.

I got myself a Nikon d3000 a couple years back and still use it today. Get some amazing pictures from it considering its an entry level camera (which is what i wanted). Their is a Nikon d3100 now which is a newer version with video recording.
Nikon Cameras have got a good Guide setting, basically if your not sure which is the best set up for certain scenarios (motor racing or low level lighting etc) just scroll through on the camera and it will set itself up for you...REALLY GOOD!!!

Nikons are shit hot, even if the cheaper versions are are branded "great for beginners". They have the capability for professional shots aswell.

Carra, personally I'd only go getting a canon or Nikon not the brands you mentioned.
Camera kits second hand market can be good for buying and selling, the canon/Nikon market is much much better for this.
